Things I Will Miss...

So most of you know that we will be heading to the east coast come late summer. Just lately I've been thinking about the things I'm going to miss when we move. Besides the obvious like friends and family, Cafe Rio is definitely at the top of the list. I'm hoping most of you have had the pleasure of eating their sweet pork salad....yum! Anyway, we randomly stumbled across Cafe Rio before we even lived here and had no idea how popular it was. It's something that Ben and I love and the kids enjoy too, and it never gets old. Today we all took a bike ride down to Cafe Rio for a salad. What a fun late afternoon activity! We burned some calories on the way there, ate a fabulous meal and burned off some dinner on the way back. Besides a minor bike crash including yours truly and my cute new bike (a story for another day), it was a great little trip. Oh, how I will miss you Cafe Rio :( Maybe they deliver to NY....?

You're going to hate this comment: There is NOTHING like Cafe Rio on the east coast. It's so sad. There are a few "fresh mex" places around here, but they are nothing compared to Cafe Rio. I also really liked Bajio's and there's nothing like it either. So sad!!!! Eat there as often as you can before you move!!!!!!!!

Yeah, I'll second that recommendation. Eat up while you can-- we totally miss Cafe Rio. Bajio is good. Chipotle is good. But, nothing is like Cafe Rio! We've tried making our own "knock off" recipes for pork burritos and salads, which taste fairly good, but nothing compares to the goodness of Cafe Rio.

Cindy, I want to hear about your crash! How sad! That picture makes me want to go to Cafe Rio right NOW! We will miss Cafe Rio too in California. :(

I want that crash story too. I am living it up on the things I will miss. Is the next thing you're going to post a picture of me??? hahaha! We seriously need to do stuff though this week; we're getting down to the wire.

There's nothing like cafe rio. Just be thankful you've had the pleasure of enjoying it for so long. Last year Jason and i were in UT for my brother's wedding and we decided we had to "maximize" our Rio intake, so we had it for lunch and dinner one day and it was still so good. Like you said, you never get tired of it.

Oh that is a very sad realization! I'm sure all the sweet NY shopping will at least dull the pain for you though! I do have the "knock off" recipe for the Cafe Rio salad dressing if ya want it!

We are going to miss you guys. I have a good recipe for Cafe Rio Salad that tastes almost exactly like it. I will give it you as a going away gift...
